Prepare and cook the capon following Farmer's Boiled Fowl method: clean and truss the bird, place it in a large pot, cover with cold water, and bring slowly to a simmer over medium heat (approximately 15-20 minutes to reach a gentle simmer). This gradual heating — a technique sometimes called 'gentle poaching' — helps keep the flesh tender and pale.
  2. 2. Once simmering, skim any foam from the surface. Reduce heat to maintain a bare simmer (approximately 185-195°F / 85-90°C) and cook until the capon is fully cooked through: approximately 1.5-2.5 hours depending on bird size (a typical market capon of 6-8 lb / 2.7-3.6 kg will require closer to 2-2.5 hours). Doneness cues: leg joint moves freely when wiggled, juices run clear when thigh is pierced, and an instant-read thermometer inserted into the thickest part of the thigh (away from bone) reads 165°F (74°C).
  3. 3. Remove the capon from the pot and allow it to rest 10 minutes before carving or presenting whole.
  4. 4. Arrange the cooked capon on a serving platter. Surround with Cauliflower Sauce poured around (not over) the bird. Garnish with sprigs of fresh parsley and serve immediately.
