1. Wash the celery stalks thoroughly under cold running water, then scrape the outer surface of each stalk with a vegetable peeler or paring knife to remove any fibrous strings.
2. Slice the cleaned stalks crosswise into thin rounds, approximately 1/8 inch (3 mm) thick.
3. Transfer the sliced celery to a mixing bowl. Add Cream Dressing No. 1 and fold together until the celery is evenly coated. Serve immediately, or refrigerate for up to 1 hour before serving; the celery should appear glossy and well-coated, with no pooling of dressing at the bottom of the bowl.
