2. Place the tomatoes in a heatproof bowl and pour boiling water over them. Let stand 1 minute. The skins will loosen and slip off easily; peel them away with your fingers or a paring knife. (This technique — briefly submerging produce in boiling water to loosen the skin — is called blanching.)
3. Refrigerate the peeled tomatoes until thoroughly chilled, approximately 1 to 2 hours, until the flesh feels cold and firm to the touch.
4. Slice the chilled tomatoes into rounds approximately 1/3 inch (8 mm) thick and serve.
