1 See Snow Pudding I. (same ingredients, with the following substitutions)
1 Apple cider (replacing the boiling water called for in Snow Pudding I.)
0.25 cup (60 ml) boiling water (to dissolve the gelatin)
1 Lemon juice: omit
Instructions
1. Prepare the recipe exactly as directed in Snow Pudding I., with the following modifications.
2. Substitute apple cider for the full quantity of boiling water called for in Snow Pudding I.
3. Use 1/4 cup (60 ml) boiling water separately to dissolve the gelatin (blooming technique: sprinkle gelatin over cold liquid first, then stir in the measured boiling water until fully dissolved and the mixture is clear with no visible granules, approximately 1-2 minutes).
4. Omit the lemon juice entirely.
5. Proceed with all remaining steps of Snow Pudding I. as written. Chill until fully set, approximately 2-4 hours or until the pudding is firm and does not wobble when the mold is gently shaken.
