1. Combine the sugar and water in a medium saucepan (2-quart / 1.9 L). Bring to a boil over medium-high heat, stirring until the sugar dissolves, then boil for 12 minutes, until the mixture thickens slightly into a light syrup — it will look glossy and coat a spoon lightly. This process is known as making a simple syrup (a solution of sugar dissolved in water by heat).
2. Remove the saucepan from the heat. Add the lemon juice and stir to combine.
3. Allow the syrup to cool to room temperature, approximately 30 minutes. The syrup may be transferred to a clean glass jar or bottle and refrigerated at this stage for later use.
4. To serve, pour the cooled lemon syrup into a pitcher and dilute with ice water to taste, typically a ratio of 1 part syrup to 2-3 parts ice water. Stir well and serve over ice.
