  1. 1. Prepare hot tea by steeping 4 teaspoons of loose-leaf tea in 2 cups (480 ml) of boiling water for 3 to 5 minutes, until the liquor is deep amber and full-flavored. Remove or strain out the tea leaves promptly to prevent bitterness.
  2. 2. Strain the hot tea immediately into glasses filled one-third full of cracked ice (roughly 1/2 to 2/3 cup / 120-160 ml of ice per glass). Pouring the hot infusion directly over ice chills it rapidly, which Farmer notes produces a finer flavor than slow cooling.
  3. 3. Sweeten to taste with sugar while the tea is still warm enough to dissolve it. Serve at once.
