  1. 1. Combine 2 tablespoons (10 g) ground coffee and 1 cup (240 ml) cold water in a small saucepan. Stir briefly to ensure the grounds are fully wetted (technique: cold-steep extraction — grounds are hydrated in cold water over an extended rest period to develop flavor without boiling).
  2. 2. Cover the saucepan tightly and let stand at room temperature overnight, approximately 8–12 hours, until the liquid is deeply colored and fragrant.
  3. 3. In the morning, place the saucepan over medium heat and bring the coffee slowly to just below a full boil, approximately 5–8 minutes, until small bubbles appear at the surface and steam rises steadily (visual cue: surface begins to tremble and shimmer; do not allow a rolling boil, which increases bitterness). Remove from heat immediately.
  4. 4. Allow the grounds to settle undisturbed for 1–2 minutes. Pour very slowly and carefully into a cup, keeping the saucepan nearly level to leave the sediment behind. The liquid should be clear and dark amber. Serve immediately.
