Instructions
1. Heat the oven to 375°F (190°C).
2. Cut stale bread into slices 1/3 inch (8 mm) thick and remove the crusts.
3. Spread each slice thinly with softened butter on one side.
4. Cut the buttered slices into 1/3-inch (8 mm) cubes.
5. Spread the cubes in a single layer on a rimmed baking sheet (any standard 18x13-inch / 46x33 cm half-sheet pan works well).
6. Bake at 375°F (190°C) for 10-15 minutes, turning once at the midpoint, until the cubes are delicately golden brown on all sides and feel crisp when pressed. Watch closely after 10 minutes, as browning accelerates quickly.
7. Alternatively, deep-fry the cubes in neutral fat (such as lard or vegetable oil) heated to 375°F (190°C) until golden brown, 1-2 minutes; drain on a wire rack or paper towels. The cubes should be uniformly golden and rigid when lifted.
