  2. 2. Preheat a cast-iron skillet or broiler to high heat. For broiling, position the rack 3-4 inches (7.5-10 cm) from the heat source.
  3. 3. Broil the porterhouse steak, turning once, until cooked to the desired doneness. For a 1-inch (2.5 cm) steak: rare, approximately 4-5 minutes per side (internal temperature 125°F / 52°C, deep red center, firm exterior with give); medium, approximately 5-7 minutes per side (internal temperature 145°F / 63°C, pink center, moderate resistance to touch); well-done, approximately 8-10 minutes per side (internal temperature 160°F / 71°C, no pink, firm throughout).
  4. 4. Transfer the steak to a warmed platter and spoon Tomato and Mushroom Sauce over the top. Serve immediately.
