  1. 1. Remove the strings from the beans and snap or cut them into 1-inch (2.5 cm) pieces.
  2. 2. Wash the prepared beans thoroughly under cold running water.
  3. 3. Place the beans in a large saucepan and cover with boiling water. Cook over medium-high heat at a steady boil for 1 to 3 hours, depending on the age and toughness of the beans. Young, tender beans will require closer to 1 hour; older, tougher beans may require the full 3 hours. The beans are done when they are completely tender and yield without resistance when pressed between the fingers.
  4. 4. Add salt during the last 30 minutes of cooking.
  5. 5. Drain the beans thoroughly in a colander.
  6. 6. Return the drained beans to the saucepan. Season with butter and additional salt to taste, stirring gently to coat. Serve immediately while hot.
