1. Scrub the sweet potatoes thoroughly under cold running water, removing any dirt. Do not peel.
2. Heat the oven to 400°F (205°C). Pierce each potato several times with a fork to allow steam to escape during baking.
3. Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, until the skins are slightly crisp and wrinkled, the flesh feels completely soft when pierced with a skewer or knife, and the internal temperature reads at least 205°F (96°C). Larger potatoes may require up to 75 minutes.
