1 cup (200 g) packed brown sugar
4 tablespoons (60 ml) heavy cream or whole milk
1 teaspoon vanilla extract, OR 2 tablespoons wine
Instructions
1. Beat the softened butter in a bowl until smooth and creamy, 2-3 minutes, until pale and fluffy.
2. Add the brown sugar gradually, a few tablespoons at a time, beating continuously until fully incorporated and the mixture is smooth, 3-4 minutes total.
3. Add the cream or whole milk and the flavoring (vanilla extract or wine) drop by drop — this is an emulsification technique: adding liquid very slowly while beating prevents the sauce from breaking (separating into greasy and watery layers). Continue beating until the sauce is glossy, uniform, and holds together, 2-3 minutes.
4. Serve immediately at room temperature, or transfer to a small bowl. If the sauce sits and appears to separate, beat it briefly to recombine. The finished sauce should be smooth, spreadable, and satiny — resembling a thick, pourable hard sauce.
