  1. 1. Measure all ingredients before beginning. Have the butter melted and the water hot (steaming, around 160-180°F / 70-82°C).
  2. 2. Combine the cracker crumbs and stale bread crumbs in a medium mixing bowl.
  3. 3. Add the melted butter and stir to coat the crumbs evenly.
  4. 4. Add the hot water and stir until the mixture is uniformly moistened and just holds together when pressed — it should be moist but not sodden.
  5. 5. Season with the salt, pepper, and onion juice, stirring to distribute evenly.
  6. 6. Use immediately to stuff the fish cavity loosely, allowing room for the stuffing to expand during cooking (do not pack tightly). This quantity will stuff one medium whole fish (approximately 3-4 lb / 1.4-1.8 kg).
