  1. 1. Wash the watercress thoroughly under cold running water, removing any roots and damaged stems.
  2. 2. Drain the watercress well, then transfer to a clean kitchen towel or salad spinner and pat or spin dry.
  3. 3. Refrigerate the dried watercress for at least 15 minutes, until the leaves are cold and crisp.
  4. 4. Arrange the chilled watercress in a salad dish.
  5. 5. Dress at the table with French Dressing just before serving, tossing gently until the leaves are lightly coated.
