1 Consommé (prepared separately), quantity as needed
1 French string beans (haricots verts), trimmed, quantity as needed
1 Carrots, cooked and cut into decorative shapes, quantity as needed
Instructions
1. Prepare consommé according to your preferred method. The broth should be clear and fully seasoned before proceeding.
2. Cook French string beans in boiling salted water for 4-6 minutes, until tender but still with a slight firmness when pierced with a fork. Drain and set aside.
3. Cook carrots in boiling salted water for 8-12 minutes, until just tender when pierced with a knife. Drain and allow to cool slightly.
4. Using French vegetable cutters (small decorative metal cutters), cut the cooked carrots into uniform decorative shapes — stars, rounds, or similar forms.
5. To serve: ladle hot consommé into warmed soup bowls or cups. Distribute a small portion of the string beans and several carrot shapes into each bowl. Serve immediately while the broth is steaming.
