Instructions
1. Prepare the cauliflower following the Cauliflower au Gratin method: trim the cauliflower, cook in boiling salted water until just tender when pierced with a knife tip (12-15 min for a whole head; florets 8-10 min), drain well, and arrange in a buttered baking dish (approximately 9-inch / 23 cm round or equivalent).
2. Coat the cooked cauliflower with the au gratin sauce as directed in that recipe.
3. Sprinkle a generous layer of grated Parmesan cheese evenly over the sauced cauliflower before adding the bread-crumb topping.
4. Cover with bread crumbs and bake in a moderate oven — 350°F (175°C) — for 20-25 min, until the crumbs are golden brown and the sauce is bubbling at the edges.
