1. Prepare the grill or broiler. If using charcoal, allow the coals to reach a steady, glowing heat before cooking. If using an oven broiler, preheat on high with the rack set approximately 4 inches (10 cm) from the heating element.
2. Pat the honeycomb tripe as dry as possible with paper towels. Thorough drying promotes crisping and ensures the cracker crumb coating adheres properly.
3. Dip the dried tripe in fine cracker crumbs, then coat with oil or melted butter, draining off as much excess fat as possible. Dip again in cracker crumbs to form a second, even coating. This double-dredging technique builds a crust that crisps under direct heat.
4. Place the coated tripe in a greased broiler basket or on a well-oiled broiler pan rack.
5. Broil for 5 minutes total (3 minutes on the smooth side first, then approximately 2 minutes on the honeycomb side), until the crumb coating is deep golden brown and crisp, and the surface shows visible char at the edges. The tripe should feel firm, not soft, when pressed lightly with tongs.
6. Transfer to a warmed serving platter, honeycomb side up. Immediately spread with butter and season with salt and pepper. Serve at once.
