  1. 1. Heat the oven to 425°F (220°C). Grease a baking pan approximately 9 x 13 inches (23 x 33 cm).
  2. 2. Cut a 1.5 lb (680 g) halibut steak into 8 short fillets of roughly equal size. Sprinkle all surfaces with salt and black pepper.
  3. 3. Arrange the fillets in the prepared pan and bake for 5 minutes, until the flesh is just opaque at the edges and beginning to firm when pressed lightly.
  4. 4. Remove the pan from the oven. Carefully drain off any accumulated water or liquid. Pour 1.5 cups (360 ml) of Brown Sauce I. evenly over the fillets.
  5. 5. Scatter 0.5 cup (55 g) of buttered cracker crumbs in an even layer over the sauced fillets.
  6. 6. Return the pan to the oven and bake an additional 8-12 minutes, until the crumbs are deep golden brown, the sauce is bubbling at the edges, and the thickest fillet flakes readily when tested with a fork and registers 145°F (63°C) at the center.
