  1. 1. Bring a large pot of salted water to a rolling boil.
  2. 2. Peel the cucumbers and cut them into rough chunks of approximately 1–2 inches (2.5–5 cm).
  3. 3. Add the cucumber pieces to the boiling salted water and cook for 10–15 minutes, until completely soft when pierced with a fork and the flesh is translucent and yielding with no resistance.
  4. 4. Drain thoroughly in a colander, pressing gently to remove excess water.
  5. 5. Return the drained cucumbers to the pot over low heat for 1–2 minutes to drive off remaining moisture, stirring occasionally, until no pooling liquid remains in the pan.
  6. 6. Mash the cucumbers with a fork or potato masher to a coarse or smooth consistency as preferred.
  7. 7. Season with butter, salt, and black pepper to taste, stirring to incorporate. Serve immediately while hot.
