  1. 1. Remove a thick slice from both ends of each cucumber. Cut away a thick paring of skin, as cucumbers contain a bitter compound concentrated near the skin and stem ends.
  2. 2. Slice the cucumbers thin (approximately 1/8 inch / 3 mm).
  3. 3. Place the slices in a bowl of cold water and hold until ready to serve, up to 30 minutes. The slices should remain crisp and pale; discard the soaking water before serving.
  4. 4. Drain the slices thoroughly. Transfer to a serving dish and cover with crushed ice. Serve immediately while cold, before the ice melts and dilutes the cucumbers.
