  1. 1. Heat the oven to 350°F (175°C). Lightly butter 4 ramekin dishes, each approximately 3 inches (7.5 cm) in diameter.
  2. 2. In a medium bowl, combine the grated mild cheese, mace, salt, and cayenne pepper. Stir until the seasonings are evenly distributed through the cheese.
  3. 3. In a separate small bowl, beat the whole egg and the egg yolk together lightly — this is a brief whisking just until the yolks and whites are combined, not until frothy.
  4. 4. Add the melted butter to the beaten eggs, then pour the egg-butter mixture into the seasoned cheese. Mix until a cohesive, slightly loose paste forms.
  5. 5. Divide the mixture evenly among the 4 prepared ramekins, filling each nearly to the rim.
  6. 6. Bake at 350°F (175°C) for 14-18 minutes, until the tops are set and lightly golden, the edges have pulled away slightly from the ramekin walls, and a toothpick inserted in the center comes out clean with no wet cheese mixture clinging to it.
